The 2023 “Crab” is a skin-contact sparkling orange wine made in the traditional method, combining lively bubbles with serious flavor and texture. Aromas of fresh apricot and jasmine lead into a vibrant palate, where fine mousse and gentle tannins add structure without overwhelming the wine’s bright character.
To achieve its distinctive color and grip, white grapes—Pinot Grigio and Albariño—are fermented on their skins, much like a red wine. Native fermentation took place with about a week of skin contact before the wine was pressed and aged in barrel for a year, allowing the tannins to soften and the texture to become round and layered.
A small portion of Pinot Noir rosé and Chardonnay was blended in before bottling for secondary fermentation. Disgorged by hand, the finished wine is juicy, complex, and refreshingly structured.
Blend: 35% Albariño (9 days on skins), 35% Pinot Grigio (8 days on skins), 15% Pinot Noir (direct press), 15% Chardonnay (direct press).
