An experimental release from Castle & Key, a revived Kentucky distillery known for small-scale, process-driven whiskey, here finished in Haitian rhum agricole barrels.
The rhum finish shows in a brighter, more lifted profile. There is citrus peel, green banana, and a lightly grassy note layered over the rye’s spice, with cinnamon and clove still present but less dominant. A faint sweetness comes through mid-palate, alongside something slightly herbal and mineral that feels closer to cane than molasses.
