We are delighted to feature this mezcal from the Cinco Sentidos collective, bottled exclusively for Holeman & Finch. The collective aims to present agave in its purest form, and true to their mission, this mezcal has not been aged, blended, or changed from production to bottling.
Maestro Mezcalero, Tio Tello, produced this unique spirit from a wild form of Mexicano agave, a varietal that is found throughout the southwest United States and northern Mexico. The plants featured in this bottle were harvested around Tello’s hometown, El Nanche, Oaxaca.
Mesquite wood heavily influenced the production of this Mezcal. The pinas were roasted over mesquite for four days before being hand-mashed with mesquite hammers. The distillate was then transferred to cypress sabino tanks to ferment. The result is a lovely mezcal that showcases a nose of green chili and jalapeno peppers with a background of underripe plantains. The palate is savory with roasted, meaty mushrooms appearing. A balanced smoke and subtle minerality flows through the tasting experience, ending in a creamy, rounded finish.
