“Freddo” is a bright, chillable red made from 100% Sangiovese grown in Paso Robles at the organically farmed Trousdale and Creston Ridge vineyards. Planted on alluvial soils of granite and sedimentary rock and shaped by the region’s dramatic day-to-night temperature swings, the fruit retains freshness while developing ripe, expressive flavors.
Winemaker Andrew Jones uses partial carbonic fermentation in sealed stainless steel tanks for about a week, followed by native yeast fermentation and four months of aging in stainless steel with minimal sulfur. The result is a light-to-medium bodied red that’s lively, juicy, and easy to drink.
Expect bright cherry and red berry fruit with a subtle savory edge and refreshing acidity. Serve slightly chilled (around 52–55°F) and enjoy it alongside spicy tomato dishes like pasta all’arrabbiata.
Fans of young Sangiovese—think easygoing styles of Morellino di Scansano or Rosso di Montepulciano—will recognize the grape’s classic character here, just in a lighter, more playful form.
