Hillrock Napa Cabernet Finished H&F Whisk(e)y Society Single Barrel · 750 ml

Our Hillrock Bourbon was aged in American Oak and Oloroso casks, then went on to rest in Dakota Shy Napa Valley “Atlas” Cabernet Sauvignon casks for a whopping 222 days. The resulting spirit presents a kaleidoscope of flavor ranging from vanilla-dusted red plums to filled almond croissants. The initial, crimson hued pour wafts out of the glass with aromas of cherry taffy, caramelized orange peel and soft violet florals. On the palate, it’s dense, decadent and complex, revealing in turn layers of dark salted caramel, treacle, red candy apple, black cherry, currants, and warm spices like nutmeg. Hints of clove and a subdued nuttiness carry into a long vanilla finish. A few drops of water open up notes of apricot gelée and a pop of white pepper. Extremely limited; only 48 bottles made.
