Aligoté from (Northeast of Chablis) Burgundy, France; medium to medium plus bodied and dry, mineral driven and savory with notes of pineapple and pear, parmesan cheese rind, bruised lemon cream, and toasted crackers, with medium plus acidity and a salty finish. Practicing Organic. The slight cloudiness to the wine is intentional, with such little intervention the true character of the Aligote is preserved.
